The Seven-Layer Food Forest: A food forest is a garden design that tries to mimic a natural forest using permaculture principles. The forest is often described as having seven layers— root crops, ground covers, herbaceous plants, bushes, vines, understory trees, and a large tree canopy.
In this workshop, after introducing the various concepts to be considered when developing a forest garden, the class will design different plots for forest gardens that could be developed on the farm. Trying to utilize the various areas as efficiently as possible, each group will present their plans. After refining the design, we will begin working in one of the gardens.
As we work, lessons in soil preparation, plant propagation, fruit tree planting methods, and placement choices will be practiced so students are prepared to develop and work in their own gardens when they leave the farm. Although we will concentrate primarily on low-maintenance edible plants and pollinators with an emphasis on perennials that thrive in our Gulf Coast, the concepts that the students will be learning will transfer to different environments.
This class is held outdoors. Dress for the heat and brambles.

Glen Miracle acquired his land for farming in 2001 and since 2008 has been farming full time incorporating Permaculture Design principles and Organic gardening methods. He is a teacher and leader in organic farming and ranching and hosts regular events and workshops at Laughing Frog Farms. He is a regular vendor at the Urban Harvest Farmers Market where you can find him on Saturdays.
Carol Burton is the Director of Permaculture for Urban Harvest and has taught and led garden classes and Professional development in environmental education since 2003. She received the 2019 Abernathy Hull Environmental Educator's Award from The Garden Club of America and recently completed advanced Permaculture Teacher Training with the Cascadia Permaculture School.
The Laughing Frog Farm is a small farm in Waller County, Texas. It is a 21-acre farm that is sitting on partially wooded land. Since then, the farm is using permaculture methods and organic principles in raising their trees, vegetables, and gulf. They are mostly raising heritage breeds like Coast, Native Sheep, and Freedom Ranger chickens. Also, they are producing red wattle pigs, tomato starts, and microgreens.
