Green Building, Farm to Table and Restoring Nature is the focus and foundation of our two-day intensive retreat at Animal Farm Permaculture Center.
In this immersive introduction to Permaculture, our presenters will lead participants through dynamic and hands-on learning in tours of renewable energy and building, market gardening, farm to table cooking, wild foraging and native plant identification.
Saturday, May 25th
Participants arrive early Saturday morning and set up camp from 8am - 9:45 am

Sunday, May 26th
Breakfast
10am-2pm - Plants: Foraging and Plant guilds. Native Plant Walk, Wetlands Plants, Herbs for culinary use. Vegetarian farm to table Lunch
2:00pm-4:00pm Camp breakdown and departure
Tent camping space around the learning center. Participants to bring their own tent and bedding. Parking lot has room for RV's and Campers without hook up.
Vegetarian meals, refreshments and snacks included.
PRESENTERS
Carol Burton is Urban Harvest’s Director of Permaculture with over twenty years of experience in backyard, school and community gardening, and environmental education. Carol is a certified teacher and curriculum specialist in environmental education. She is a Certified Permaculture Design Consultant and recipient of the Elizabeth Hull Abernathy Award from the Garden Club of America for outstanding contributions to environmental education of youth. She is also the co-author of Urban Harvest School Garden Guide for the Greater Houston Area.
Simone Roemhild is a Montessori educator former tailor, fashion, graphic/digital media designer, librarian @heart, and storyteller, herbalist, forager, and steward of the land.
Cas and Gita Vanwoerdin, Owners and Proprietors of Animal Farm Permaculture Center. Animal Farm is a working, sustainable permaculture center located 65 miles west of Houston on a 70-acre property with twenty acres dedicated to producing high quality certified organic vegetables and flowers. They sells farm products through a CSA, Farmers’ Markets, and to select produce stores and restaurants in the Houston and Austin areas. Cas and Gita are founding members of the Houston Permaculture Guild and longtime teachers and presenters of the Urban Harvest Permaculture Design Certification program.
