Description:
November is about taking the fall garden to the next level. Participants will learn how to support plant health through companion planting, strengthen soil for continued production, and explore how greenhouses and covered growing spaces can help protect seedlings, extend the season, and be a space of multiple uses in different seasons.
This class is designed to help participants think beyond one garden bed and into garden systems: which plants support each other, how to prepare soil between planting cycles, and how simple greenhouse strategies can create more resilience in the garden.
Hands-on activities:
Participants will design companion plant groupings, explore greenhouse uses, start or care for greenhouse seedlings, harvest finished compost, apply compost to growing areas, and plan soil-building strategies for the next planting cycle.
Permaculture Principle:
Integrate Rather Than Segregate — Participants learn how companion plants, greenhouses, compost, soil life, and crop planning work together as one connected system.

About our Permaculture Presenter:
Patrick “Shui” Guillory is a former Division I swimmer who found balance through yoga, meditation, and Qigong during his years as an elite athlete. He later became a certified yoga and Qigong instructor, studying under Taoist master Mantak Chia, and apprenticed in regenerative gardening for seven years with master gardener Terry Garner. Shui holds a Permaculture Design Certification and graduated from the Urban Harvest Permaculture Teacher Training in 2025, deepening his ability to educate and guide others in regenerative practices.
Inspired by his grandfather’s legacy as a gardener, Shui designs edible landscapes, composting systems, and food forests that help families and communities create abundant, self-sustaining gardens. His work integrates practical permaculture strategies with a spiritual connection to nature, guided by the core ethics of Earth Care, People Care, and Fair Share, fostering both ecological restoration and personal connection to the land.

With a network of over 160 edible gardens throughout the Greater Houston area, it's easy to get involved in a garden near you. Urban Harvest provides affiliate gardens with volunteer engagement and workdays; seed and plant distributions; and, free education opportunities to help each garden become long-lasting and well-established for the community it serves.
